At Canard Doré 京品堂, we carry on the ancestral art of Peking lacquered duck. Our chef, trained in the finest establishments of Beijing, prepares each duck with traditional expertise: a crispy golden skin, tender and fragrant meat. Served with thin pancakes, fresh scallions and hoisin sauce, every bite is a journey into the heart of imperial Chinese gastronomy.

An imperial tradition

Peking duck was born in the kitchens of the imperial court during the Ming Dynasty, over 600 years ago. Once reserved for the emperor and his court, this exceptional dish has become the symbol of Chinese gastronomy worldwide.

A unique craft

The preparation takes 48 hours of work. The duck is first inflated to separate the skin from the meat, then coated with a blend of honey and vinegar before being air-dried. It is then roasted in a special fruitwood oven, where the skin becomes perfectly crispy and golden.

The art of tasting

The duck is carved in front of you into thin slices by our chef. Each slice is enjoyed wrapped in a thin mandarin pancake, accompanied by fresh scallions, cucumber and hoisin sauce. It is a ritual of sharing, convivial and generous.
